Crottin Cheese

I made a Crottin with raw cow’s milk on 3/14 and aged it until today.  We unveiled it and served it with our warm sourdough bread and a glass of vintage Champagne.  Yummm!

Epoisses Cheese progress

March 30, 2014

I missed a few turns during sleep time but got on it early this morning.  Looking good!  After 24 hours it was ready to take out of the cheesecloth and rubbed with salt to air dry for 18 hours.  Then the washing will begin for the next six weeks.

Smoking Class

The smoking class went great in spite of rain.  We smoked salmon, smoked tomatoes, smoked French Country sausage with shrimp and red rice and Smoked Ribs with coleslaw.  Finale was grilled pineapple crisp!
