Salami and Sausage Making Workshop
This class is about six hours in length and will introduce you to making fresh sausage and cured salamis which are some of the most popular artisanal culinary items today. We will make both in class and incorporate them into small plates that we will savor throughout the day. As the salami needs time to cure we will have made some in advance to properly age it for consumption as well as make some in class to teach technique. You will receive your personalized technique booklet along with recipes and sources for the equipment and ingredients you will need to make salami and sausage at home.
